The From field reflects who actually sends the mail. This field is automatically set by the document.send process, so there is no point in trying to set it to something else manually. You may only set the "apparent" sender via the Principal field.

There is only one way to bypass the automatic setting of the From field, and that is saving the document directly in the mail.box database (locally or on the server). But that is a hack that is not recommended. Read the Agent FAQ for details.
